Ok so it sound pleasure free but actually I quite like it, my husband will not try it, he thinks it sounds awful, so I can only give you my verdict ~ I give it a thumbs up for taste {if you add a honey drizzle} a thumbs up for texture and a thumbs up for it being totally guilt free so I don't feel bad serving myself a rather large slice.
Ingredients:
1 1/2 cups of almond flour
1/2 cup of desiccated coconut
1 1/2 bicarbonate of Soda
Pinch of salt
4 ripe banana's
6 eggs
2 tbs good quality oil (I used organic rapeseed oil)
1 cup of chopped walnuts
Honey for drizzling
Method:
Preheat the oven to 175 degrees.
Line a loaf tin with greaseproof paper.
Mix the almond flour, desiccated coconut, bicarbonate of soda and salt together.
In another bowl mash the bananas and whisk in the eggs and oil.
Combine with the dry mixture.
Add the walnuts and pour into the loaf tin.
Pop it in the oven for 50 mins or until cooked right the way through.
Once its cooked turn it out onto a cooling rack.
I turned it upside down at this point and drizzled it with a good glug of runny honey and let it soak through. Adding the honey is an optional extra, but I have a sweet tooth and cake wouldn't really be cake if it wasn't sweet would it.
