Roast Pumpkin & Sage Soup

 

Hello all and a happy halloween to you too, to celebrate this occasion we will be doing nothing other than enjoying a bowl of roast pumpkin and sage soup. I tried this soup at our favourite restaurant a few years ago and I have loved it ever since, I had to try and recreate my own version of it.


For this recipe you will need:1 medium pumpkin4 cloves of garlic (more or less depending on your love of garlic) A hand full of fresh sage2 pints of vegetable stock  Olive oilMethod:Pre-heat your oven to 200 degrees. Place your diced pumpkin, garlic and most of the sage leaves on a baking tray and drizzle with a little olive oil. Pop them in the oven and roast until slightly soft. When the pumpkin and garlic has softened (your kitchen should smell amazing at this point) add them to a large heavy pan and cover with stock, bring to a boil then turn down to a simmer for about 5 minutes.With a hand blender blits the pumpkin, garlic and sage until a creamy soup consistency.Serve the soup with a leaf or two of the remaining sage for decoration and a wedge of warm bread.
